A real passion for homebrewing

A real passion for homebrewing, a solid entrepreneurial experience handed down through generations and a simply unique place, Assisi: these are the foundations on which the new brand Birra dell’Eremo was founded in 2011, an artisan brewery with the right balance between history and flavour. On the slopes of Mount Subasio, Geltrude Salvatori Franchi’s project began, with her husband Enrico Ciani, brother Filippo and the support of the rest of the family. Enrico, thanks to his degree in agriculture and a specialised training at CERB (Italian Brewing Research Centre, Perugia), is today able to transform his dream into a reality. In the new company, Geltrude, graduated in International Relations and coming from a family of entrepreneurs and agriculturists, has channelled her energy, looking to interpret her role as manager in a modern and dynamic way. Geltrude wanted her brother Filippo, who is in charge of logistics and purchasing, at her side, while her mother Francesca supervises. A family business therefore, in which a profound knowledge of brewing is combined with passion, love of beer and the desire to diffuse the culture of authentic artisan beer.

A young and dynamic company, careful of ecological sustainability. From the choice of packaging, with a recycled glass bottle, to respecting all the qualitative and environmental standards.
In addition to this there is the use of KeyKeg disposable barrels and re-usable Ecofass kegs, which use less water and fewer chemical cleaners when being washed. The barrels, with single-use beer bags are energy saving and easily recycled and what’s more they reduce waste, thus using all the content. The beer never comes into contact with CO2, keeping the flavour and fragrance unaltered. It is possible to tap the beer both with a traditional CO2 pump or with a compressed air tap.
Approved UN barrels series 359 HDPE provide an innovative eco-friendly solution, in line with our company’s way of thinking. Furthermore the dregs are never thrown away, but given to local farmers who use them as animal feed.

A white coloured frothy beer which has a light and lasting head. On smelling, one notices a strong aroma of citrus fruits, among which lemon is the most evident. The flavour is well balanced, the bitterness is balanced and disappears giving way to malty notes.

Ingredients: water, malted barley, hops, yeast.
Ideal temperature: 6-8°C
Alcohol content: 5% Vol.

A straw-yellow coloured beer with white lasting head

A straw-yellow coloured beer with white lasting head. On smelling, there is an aroma of yeast and citrus fruits which give way to intense spicy notes of coriander and oranges. The taste has a delicate, light flavour; it is a dry beer which is not very bitter. The aroma is of citrus fruits which makes the beer refreshing.

Ingredients: water, malted barley, wheat, oats, hops, spices, yeast.
Ideal temperature: 6-8°C
Alcohol content: 5% Vol.

An amber coloured beer with a white lasting head

An amber coloured beer with a white lasting head. This beer has malty and fruity aromas and the sweet taste of malt immediately gives way to the slight bitterness of the hops.

The Fuoco is a Tripel style beer

The Fuoco is a Tripel style beer, with an intense gold colour and delicate white lasting head. On smelling, there is an aroma of bread crusts. On tasting, malt is the dominant flavour thanks to the soft and warming notes of caramel. The Fuoco is a beer which is easy to drink, despite its alcohol content.

Ingredienti: Acqua, malto d'orzo, luppolo, zucchero di canna, lievito.
Temperatura ideale: 10-12°C
Alcohol content: 8,5% Vol.

Birra artigianale di Perugia: Fuoco Magnum

Birra dell’Eremo introduces a 1.5 litre magnum of numbered bottles which are signed by our master brewer Enrico Ciani. The beer is the Tripel: a pale double malt. The name comes from the "Canticle of the Creatures" by St. Francis of Assisi. For this beer we have chosen the element of "fire" for its beauty and its strong and robust character.
